Krazy Kristen's Lettuce Wraps

This looks soooo delicious and easy I can't WAIT to make this.  Thank you Kristen Fink!!

Chicken Lettuce Wraps
2 boneless skinless chicken breasts cooked and cubed
1 tablespoon of unsalted peanut butter
3/4 cup of shredded carrots
1 head of green leaf lettuce
1 cup of low sodium soy sauce
1 teaspoon of ground ginger
1 teaspoon of ground coriander
1/2 teaspoon of truvia sugar

1. Microwave the peanut butter for 20-30 seconds then whisk together the soy sauce, ginger, coriander, truvia sugar, and peanut butter. Place the chicken and shredded carrots  in a Ziploc bag and add the soy sauce mixture. Seal and refrigerate for 15 minutes. Drain any excess liquid. Spoon the mixture onto lettuce leaves and roll up and enjoy.
