Spinach with Garlic Vinaigrette

My ultra calorie counting champion client, Toby Schuller, gave me this recipe.  This is a simple, cheap, and delicious way to put together something WAY better than just salad.  It's foods like these that help this young woman of 68 continue to do all the same exercise demands I give a 30 year old!  Enjoy!

Toby the Talker's Spinach with Garlic Vinaigrette!

1 1/2 tablespoon extra-virgin olive oil
1 tablespoon white wine vinegar
1/2 teaspoon Dijon Mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
2 garlic cloves, minced
6 cups baby spinach leaves (about 6 ounces)
1/4 cup vertically sliced red onion

Combine the first 6 ingredients in a large bowl, stirring well with a whisk.  Add 6 cups spinach and red onion; toss to coat.  Yield: 4 servings (serving size: 1 3/4 cups)
